Zucchini/Raisin I Suck at Updating Muffins


Andy gave me a zucchini. It sat in my kitchen for a few days. I wasn’t sure what to do with it. I wouldn’t say that I’m the biggest zucchini fan. I mean, they’re okay. Maybe I just don’t know how to cook them. I feel like they just blend in with whatever other flavors I am cooking.

So I have this one medium sized zucchini. I decided to make zucchini bread. I looked through cookbooks for a recipe but everything called for about 2 cups of zucchini. I didn’t have that much so I halved the recipe and made muffins. Zucchini + Muffin pan = Individual portions = easy to give away = two thumbs up.

I found a recipe for Zucchini/Cranberry bread in Dorie Greenspan’s Baking from my home to yours. I didn’t feel like going to the actual grocery store to purchase craisins so I walked up the street to a little Italian market that just happened to have freshly made raisins. Sweet. They were huge. I chopped them up.

These were quite tasty and pretty sweet. I sprinkled a little sugar on the tops prior to baking to make them sparkle (shut up) but it didn’t really work out that well. The sugar mostly just melted into the batter.

Umm I made this like a month ago and I’m finally posting it.  Unfortunately, I can’t find the recipe.  It might not be in that cookbook.  uhhh. Distract with a picture.
