Saturday Afternoon

This has been a lovely day so far. I had this snack around noon before heading out to the gym. That would be about 3/4 cup Greek yogurt with mashed strawberries, 1/2 banana, corn flakes and oats. mmm. I decided to eat the rest of the banana too since I hadn’t had lunch.

I ran 1.5 miles on the treadmill at a decent pace and then did the treadclimber for 25 minutes then I saw this dude that I’m trying to avoid and quickly left. AH.

I tried to stop and buy large amounts of cinnamon at Penn Mac but didn’t feel like looking for a parking spot so I just came home to make this pile of randomness.

Here is what I did:

  • Roasted 1 small potato and some broccoli with fennel and pepper. (25 minutes)
  • Made 1 serving of brown rice on the stovetop. (10 minutes)
  • Sauteed the remaining swiss chard and some spinach with garlic and olive oil. (6-8 minutes)
  • Made a lovely ring of rice on the plate, piled on the greens and then the potatoes.
  • Added some low sodium soy sauce and sriracha.
  • ATE.

    That was a good lunch. I’m trying to use up random bits of things that I have in the kitchen rather than buying new in an attempt to stay within the budget.

    Andy called just as I was finishing preparing lunch and we discussed plans for the evening. (We still have no idea). I’m pretty sure we’re going to a bar for a few drinks but we have no definite plans yet. I need to shower and get dressed but first I’m going to have another snack of some sort.

  • QED Morning!

    OH MY GOSH Chris Fenimore is boning a chicken. I can’t watch. It’s so disturbing.

    ANYWAY

    I woke up early this morning — around 7:30 — and then forced myself to lay in bed until 8:30. I went to bed kind of late last night so I should have slept a little bit more. Oh well. I got out of bed and made French press! I think I’ve finally mastered the coffee/water ratio to my liking. Even though the coffee I have isn’t great, it turned out pretty well this morning. I had 2 cups with half & half and a wee bit of sugar.

    I then perused the internet while watching the Early Show until about 9:30. I wasn’t really hungry right away this morning because I may or may not have eaten a large bowl of cereal and then a piece of chocolate late last night. I’ve been extra hungry and craving sweets this week and I think it’s important to give in to cravings, within reason.

    At 9:30 AM, I started my breakfast. I considered oats but figured I should use some of the veggies that I have instead. Plus I’m out of good oatmeal toppings (read: pumpkin) so the oats weren’t as appealing this morning.

    I made eggs with spinach, onion and grape tomatoes. I bought a ton of grape tomatoes the other day at Trader Joe’s and they need to be used pretty quickly.

    Here is the pan with the onions, tomatoes and I just added the spinach. Look at all of the veggie goodness!

    I used the remainder of the Reddi-Egg for this. I’m a fan. I definitely can’t tell the difference between regular egg and Reddi-Egg. I bought a carton of Trader Joe’s 100% Whites the other day so I’ll let you know how that is. I’ll probably use that along with one regular egg going forward so that I don’t waste any yolks.

    Alright that’s about it for now. I’m looking forward to watching the Saturday morning QED cooking shows and then probably going to the gym. Lunch in a few (hours).

    It’s Friday! It’s 8:13 PM!

    Work went quickly today. I was pretty busy and actually doing things that required a brain so that was exciting. I love spreadsheets more than you can imagine.

    Breakfast was blueberry oats. mmm. 1/2 cup oats, blueberries, Honey Sunshine and cinnamon.

    I also purchased coffee (3/4 caf, 1/4 decaf) and had that banana around 10:30.

    I ate lunch while doing work so I just ran downstairs and got a salad. Baby spinach, feta, black beans, beets, broccoli, red onion and raspberry vinaigrette. This was the first salad that I actually liked from that place. Normally they’re horrible and I only go there out of necessity.

    Around 3, I ate about 1/2 of a red bell pepper raw for a small snack.

    I hit up the gym on the way home hoping it would uplift my mood. I’ve been going crazy the last few days. Mood swings. Ugh. I did 20 minutes on the treadclimber then 15 minutes on the sort of elliptical thing.

    I got home and had Trader Joe’s Greek yogurt with mashed up strawberries (They were frozen. I defrosted in the microwave and then mashed with a fork) and some oats.

    It’s about 1/2 the price of Fage with even better nutritional content!

    22 GRAMS of protein per cup. Whoa. Unfortunately, it’s not as good as Fage. It’s good but not nearly as thick and creamy. Oh well. It’ll do. I’ll probably switch it up between Fage and Trader Joe’s.

    Eggs with spinach, bell peppers, onion and ketchup. mmm. I also had a chunk of feta and…a Hershey’s Kiss at work. I’m looking for something else now. Alright I’m off. I’ve got things to do.
