Monday! Ugh.
First of all, yesterday mom and I made a blueberry bundt cake to take to Aunt Isabel’s for dinner. I didn’t take a picture of the finished product! I forgot, but here it is baked and ready to fight with me about coming out of the pan.


I got the recipe from a Williams-Sonoma Cakes, Cupcakes and Cheesecakes cookbook. I LOVE this cookbook. I bought it from Amazon for like $2. The cake came out very moist and not too sweet. We also drizzled a simple lemon, confectionery sugar glaze on the cooled cake. We used frozen blueberries. Delicious! Next time, I think I’ll use more blueberries though.
Anyway, I started out the day with PB2 Oats with Flax Plus:

Mom has a Costco membership and took me shopping to purchase a 5 year supply of coffee filters…
Lunch was a salad with field greens, red onion, beets, banana peppers, salsa, and leftover salmon from last night’s dinner at Aunt Isabel’s. The salmon was DELICIOUS. She used a Giada recipe and it was great! We also had a grilled romaine salad, a Giada pasta recipe, sun-dried tomato foccocia, three bottles of wine and blueberry cake for dessert. Dinner was great!

I used chipotle barbacue sauce for dressing. Weird eh?
