Monday is over!
Monday evenings are usually pretty relaxing for me. I don’t do any exercise on Mondays and I don’t usually have any plans. Plus I’m fully stocked with groceries so I can (not necessarily will) cook something a little different for dinner.
I started out the morning with pumpkin oats with Kashi Heart to Heart:

I bought oats at Trader Joe’s this weekend. I’ve never had them before. I usually have either Quaker or the generic Giant Eagle brand. I didn’t actually eat the TJ’s kind today because I still had some Quaker oats left but I believe I’ll break into them tomorrow so I’ll let you know.
Oh by the way, I finished my 9 POUNDS of oats that the mother bought me when she was visiting. When was that? Like a month and a half ago. Ridiculous amounts of whole grains. Ridiculous!
Moving on, the morning went quickly. I went to the library and got two more books out of the library because I finished my food memoir last night. I got back to the office and had my giant salad lunch.

I got home and ate some more egg whites with my favorite salsa and then started to cook some dinner. I needed to use my gypsy peppers from the farmer’s market last week soooo I made stuffed peppers.
First you cut off the tops of the peppers and empty them of seeds and other pepper innards:

Then you make a mixture of all sorts of random, almost spoiling vegetables that you have in your fridge (in my case — baby spinach, grape tomatoes, yellow onion, basil from my porch) plus bread crumbs, olive oil, feta, salt, black and red pepper. Cover the mixture and microwave for about 40 seconds to wilt the large amounts of spinach.

Line your pans with aluminum foil and spray with non-stick spray if you are lazy like me then stuff your peppers and place in the pan:

Slice a zucchini and the remainder of the onion from the stuffing mixture, toss with olive oil, salt, and red pepper and bake everything at 375 for 25 minutes, flipping once.

Take out of the oven and let cool for a few minutes:

EAT! I ate FOUR stuffed peppers and the entire zucchini. Yep. I eat large quantities of veggies. I also ate a plain wrap on the side and then some yogurt with various things mixed in for dessert.
