Waste not.

Monday is over!

Monday evenings are usually pretty relaxing for me. I don’t do any exercise on Mondays and I don’t usually have any plans. Plus I’m fully stocked with groceries so I can (not necessarily will) cook something a little different for dinner.

I started out the morning with pumpkin oats with Kashi Heart to Heart:

I bought oats at Trader Joe’s this weekend. I’ve never had them before. I usually have either Quaker or the generic Giant Eagle brand. I didn’t actually eat the TJ’s kind today because I still had some Quaker oats left but I believe I’ll break into them tomorrow so I’ll let you know.

Oh by the way, I finished my 9 POUNDS of oats that the mother bought me when she was visiting. When was that? Like a month and a half ago. Ridiculous amounts of whole grains. Ridiculous!

Moving on, the morning went quickly. I went to the library and got two more books out of the library because I finished my food memoir last night. I got back to the office and had my giant salad lunch.

I got home and ate some more egg whites with my favorite salsa and then started to cook some dinner. I needed to use my gypsy peppers from the farmer’s market last week soooo I made stuffed peppers.

First you cut off the tops of the peppers and empty them of seeds and other pepper innards:

Then you make a mixture of all sorts of random, almost spoiling vegetables that you have in your fridge (in my case — baby spinach, grape tomatoes, yellow onion, basil from my porch) plus bread crumbs, olive oil, feta, salt, black and red pepper. Cover the mixture and microwave for about 40 seconds to wilt the large amounts of spinach.

Line your pans with aluminum foil and spray with non-stick spray if you are lazy like me then stuff your peppers and place in the pan:

Slice a zucchini and the remainder of the onion from the stuffing mixture, toss with olive oil, salt, and red pepper and bake everything at 375 for 25 minutes, flipping once.

Take out of the oven and let cool for a few minutes:

EAT! I ate FOUR stuffed peppers and the entire zucchini. Yep. I eat large quantities of veggies. I also ate a plain wrap on the side and then some yogurt with various things mixed in for dessert.

Grey Areas.

Hello!

When was the last time I blogged? I’m really having internet troubles plus I’ve been kind of busy so I’ve been slacking with the blog. My mood varies with blogging. I try to embrace it because I don’t think you should feel guilty about not blogging. Unless it’s your job I guess… It’s not my job so I blog as I please.

Well I guess the last day that I blogged was Thursday at lunch so let’s go from there.


Thursday night, Friend came over and we made pizza.

    We ate it anyway. It was okay. I’m not a fan of these crusts and I couldn’t taste the basil at all. Perhaps I should have added it after baking. Or just not burnt the pizza…. I lowered my oven rack to the very bottom before cooking this. Bad move Pamela.

    I had Pita Pit TWO times this week because I sucked at packing my lunch this week. Ohhh well.

    Friday evening Andy and I went to Tamarind for dinner before seeing Doubt. It’s in an old house in Oakland:

    I got the Beigan Bartha because I LOVE eggplant like nobody’s business. Haha I just said nobody’s business. That’s one of those things that goes through my head while typing but I usually don’t type it.

    I am now officially a lover of Indian food. It was GREAT. I ate about half then took the rest home. I ended up eating it around 10 PM when I got home from the theatre!!

    Doubt was really good too! The theater in Oakland is really tiny and we were right in the center so I found myself really engrossed in the story. That’s the third play I’ve been to through the Irish and Classical Theatre and it was definitely my favorite. Thanks Andy!

    I got to bed pretty early with plans of doing my long run fairly early in the AM.

    I got to North Park by about 9:30 Saturday morning. I made a stop at Dick’s to get some new socks. I concluded that the blister on my toe was due to my socks so I got some actual running socks.

    So the plan was 6.5 miles. Each week I’m attempting to increase my long run by half a mile. So I started out feeling okay. I was concerned that the Garmin might die because it immediately warned me of a low battery when I turned it on. Luckily it didn’t die! That would’ve been very discouraging.

    It was much more humid than last week so this 6.5 miles was A LOT harder than last weeks 6 miles. I remember chanting WATER in my head repeatedly as I searched for a water fountain. I stopped at 3 I think but was still majorly dehydrated by the end. I was also chanting something like “you can do this, you can do this. Why are you doing this? Why are you doing this? Water water water water.” Yes, it was that kind of run.

    I managed to survive though!

    I stopped at the grocery store on the way home and munched on a Luna bar and a plain wrap because I couldn’t keep my hands out of the groceries plus a giant bottle of water.

    I got home and relaxed and ate a TON until I felt way too full and then went to Sarah’s house.

    Sarah and I hung out until around 9 or something and then I came home and read my new book which I love. I’m about halfway through. It’s definitely easy Summer reading which is what I’ve been wanting.

    Oh by the way, I never mentioned where I’m going for my little solo-vacation. I’m going to Vegas!!! LOL I know. It was really random. I had been planning to take a train to DC for a couple of days but that was going to be more expensive than flying to Vegas and staying for three nights. Weird. Sooo I’m going to Las Vegas by myself for three nights. I’m definitely not a gambler or a partier. I just plan to relax and take long walks and pictures. I might take a trip to the Grand Canyon but I’m still undecided at this point. I’m really excited though. It’s going to be lots of fun!

    Lunchtime post!

    I’m sitting in the library right now. Downtown.

    First of all, I’ll show you dinner last night since I did actually take a picture.

    A frozen TJ’s rice & bean burrito and a summer squash! One of my coworkers has an overproducing garden and brought me two yellow squash! Squashes? I think squash is plural. Of course I roasted it and ate the entire thing.

    Hmm last night I did manage to do one load of laundry and then get to bed by 10.

    I woke up around 3 AM to lots of rain. Hmm. This didn’t look good for my planned morning run… I went back to bed until 5:05 AM when the alarm went off and I wandered on to the porch to …find an excuse not to run. It was sprinkling a little but I checked the weather and the weather person said the rain was moving away from the city. I convinced myself to run. I wasn’t very sleepy but had some iced coffee and half a banana and set off. It was kind of late at this point so I didn’t let the Garmin find a signal and just started the timer. I was going my normal route so I knew the distance. Sort of. I’m estimating it was about a 3.5 miles.

    It was already like 70 degrees that early and RIDICULOUSLY humid. I was literally dripping sweat by the time I made it back to my apartment. I’m not sure why but this run was pretty hard. I had to really push myself. Perhaps it was the evil humidity. That’s what I’m thinking…

    I was concerned that it might rain while out there so I wrapped the Ipod in a ziploc baggie and stuffed it into my armband. Worked well!

    I didn’t get back until late this morning so I had to skip my morning 20 minutes with Matt Lauer and rush to get ready.

    I got to work at 8 and had pumpkin/yogurt oats with Puffins:

    That blue container had frozen strawberries that I ate around 10. Then I had two big handfuls of Puffins… I was hungry.

    Alright time to check Facebook go back to the office and eat lunch.

    I have to pick up some book that I requested too. I can’t remember what it is. I bet it’s food related…
