So I tend to not blog over the weekends. I’m not sure why. I think blogging on weekdays seems to help me unwind whereas on the weekends, I’m already unwound… yes? Sort of makes sense.
Anyway, it’s Tuesday morning, 6:31 AM. I had plans of going to the gym but that went out the window because I’m tired and just couldn’t bring myself to do it. Then I thought about doing yoga because I downloaded a 60 minute class (Power Vinyasa Flow #5) from yogadownload.com but that went out the window too because I was feeling lazy. So here I am, drinking coffee and blogging.
Friday night, Aaron and I had had dinner with his parents, his brother and his brother’s girlfriend. Sorry for the poor picture quality. It was dark in there. We went to Tandoor Grill which for you Pittsburghers, is located on Centre Ave in North Oakland at the end of Craig Street. There is actually another Indian restaurant called Tamarind about a block away too. I like them both. I’m pretty sure they’re both byob also so check them out. I think I may like the food at this one a wee bit better than Tamarind. I had the baigan bartha but will spare you the picture because it was terrible and really, mushed up eggplant isn’t very visually appealing.
One picture for you — Aaron’s brother & his gf:

Saturday was spent walking about three miles through Shadyside (to buy Aaron a belt for his birthday), to Whole Foods and then back. My car is still stuck in the garage so errands had to be done on foot. It wasn’t a bad walk though.
Aaron turned 29 on Valentine’s Day!!!! Happy Birthday Husband!!!!
Anyway…
For Aaron’s and my birthdays this year, we decided to forgo big gift-giving and put all that money toward the wedding. I told him I would cook him MEAT for his birthday dinner though.
Enter the chicken:

And the huge mess that I made:

Chicken had it’s own cutting board. You forget about things like e.coli when you don’t cook meat ever… I did have a meat mallet either so I ended up covering the chicken with plastic wrap and pounding it with my fist. Ha. It worked.
Dinner came together pretty well. I used this Tyler Florence recipe for the chicken parmesan subbing dried basil for fresh but everything else was the same. I also made eggplant parmesan for myself (round dish on the right). I breaded the eggplant with panko breadcrumbs and then baked it for 20 minutes. Then I covered the eggplant with sauce, slices of fresh mozzarella and sprinkled with parmesan. Then it was baked for 15 minutes at 400 degrees until bubbly.

I also made baked sweet potatoes fries. Weird, I know.

Dinner was great! Aaron was happy:

Pooooor lighting…

Sunday morning, we went to 8:30 AM church then drove past Coca Cafe but quickly decided against it due to the likelihood that we would run into five million people that we know plus it hadn’t even opened yet. We decided to hit up Costco in the Waterfront for mass amounts of produce and 40 lbs of kitty litter then go to Eat n’ Park instead…

I had two eggs over-easy plus 6-grain toast and a cup of fruit in place of the bacon/sausage:

I don’t remember what we did the rest of the day but around 5, Aaron had band practice then a show in Shadyside which I skipped out on in favor of sitting around in pajamas and watching The Holiday on TBS.
Monday… I was off work!!! Bank holiday!!! Aaron dropped me off at the gym on the way to work. I ran about 4.5 miles at varying speeds in the completely empty gym then came home to watch Rachel Ray and eat GIANT shredded wheat biscuits.

Check out the packaging:

Predetermined portion sizes:

Alright, it’s 6:47 now. I really need to get ready for work. Have a great day!!!!
