(Birthday) Cake & another freaking snow storm.



Well it’s Wednesday evening. I had a semi-snow day today. We got another 8 inches or something over the course of last night and today on top of the two feet we already had sooo I didn’t make it downtown to work today. The work phone chain informed me to work from a remote location if possible. Since I can’t work from home, I trekked over to the conveniently located Bloomfield branch to work.

I kind of wish I could work there all the time except…I’ll be living in Troy Hill come June. Let’s not talk about that. I NEED TIME TO ADJUST.

Also, I’m glad you all seem to have enjoyed Aaron’s guest post! I finally read it in it’s entirety today and enjoyed it very much! He’s a pretty good story teller, eh? Maybe soon there will be a MOIP blog?? Exciting??!

So today I worked for a while, walked to Shur Save to buy Greek yogurt for lunch(who knew they would carry Chobani) and then the branches closed at 3:30 so I got to leave early.

I took advantage of my extra time and did a Dave Farmar podcast that pretty much killed me.  It was a 75 minute power vinyasa class. I wore this:

Moving on to the cake that I mentioned on Saturday though. I’m about to post another recipe! What is this? A food blog?? So this past Saturday, as we were snowed in, I baked a cake for the future mother-in-law’s birthday. Sadly, she never even got to taste it because of the bad weather. :( It’s okay though. Future MIL, if you’re reading, I promise I’ll bake you another cake soon! Also, Happy Birthday!!

Perfect Party Cake Recipe

Very slightly adapted from Dorie Greenspan’s Baking: From My Home to Yours

Makes 12 to 14 servings

For the Cake

  • 2 1/4 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups whole milk or buttermilk (I used 3/4 cup buttermilk & 1/2 cup whole milk)
  • 4 large egg whites
  • 1 1/2 cups sugar
  • 2 teaspoon grated lemon zest (zest of one lemon)

Center a rack in the oven to 350 degrees F. Butter three 8 x 2 inch round cake pans and line the bottom of each pan with a round of buttered parchment or wax paper. Put the pans on a baking sheet (or two).

Sift together the flour, baking powder and salt.

Whisk together the milk and egg whites in a medium bowl.

Put the sugar and lemon zest in a mixer bowl or another large bowl and rub them together with your fingers until the sugar is moist and fragrant. Add the butter and, working with the paddle or whisk attachment, or with a hand mixer, beat at medium speed for a full 3 minutes, until the butter and sugar are very light. Add one third of the flour mixture, still beating on medium speed. Beat in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated. Add the rest of the milk and eggs, beating until the batter is homogeneous, then add the last of the dry ingredients. Finally, give the batter a good 2-minute beating to ensure that it is thoroughly mixed and well aerated. Divide the batter between the three pans and smooth the tops with a rubber spatula.

Bake for 20 to 25 minutes, or until the cakes are well risen and springy to the tough – a thin knife inserted into the centers should come out clean. Transfer the cakes to cooling racks and cool for about 5 minutes, then run a knife around the sides of the cakes, unmold them and peel off the paper liners. Invert and cool to room temperature right side up. (The cooled cake layers can be wrapped airtight and stored at room temperature overnight or frozen for up to 2 months.)

For the Whipped Cream (in between layers)

  • 1 cup heavy cream
  • 3 tablespoons confectioner’s sugar

Using a stand mixer with whisk attachment or hand mixer, whip the heavy cream at medium speed until it begins to thicken. Increase speed slowly and add sugar. Continue to whip until soft peaks form. Do not over whip or you’ll make butter…

For the Buttercream (outside and piping)

  • 1 pound confectioner’s sugar, sifted
  • 3 sticks unsalted butter, softened
  • 1/2 teaspoon vanilla extract

Beat butter with a mixer on medium-high speed until pale and creamy, about 2 minutes (I used my stand mixer with the whisk attachment). Reduce speed to medium. Add sugar, 1/2 cup at a time, beating after each addition until smooth. (After every 2 additions, increase speed to high, and beat for 10 seconds, then reduce speed to medium-high).

Add vanilla, and beat until buttercream is smooth. Use immediately, or cover and refrigerate for up to 3 days. (If refrigerated before using, bring to room temperature, and beat on low speed until smooth.)

Make the batter and put in three disposable aluminum baking pans because you don’t have nice bakeware (but soon will once people buy me things from the registry…!)

Place in the oven on baking sheets and use an oven thermometer if your oven sucks like mine.

After the layers have cooled, spread the whipped cream between each:

Apparently we missed a picture of frosting the outside of the cake but that did happen. I used an offset spatula and tried to focus while Aaron commented on how GREAT I would be at spackling. 201002102008.jpg

Next up was covering the sides with slivered almonds. This happened for two reasons.

  1. Aaron’s mom said she liked almond cake.
  2. You don’t have to do a good job frosting the sides at all.

I put pieces of parchment on the cake round to pull off after I was done to keep it neat.

Next up was piping the edge. I separated a portion of the buttercream for the piping bag and then thinned out the rest of it with additional vanilla extract for frosting the actual cake.

The cake was definitely lemony and pretty dense but good. I would make it again for sure but I think I’d add more frosting on top. My frosting layer ended up being really thin because I wasn’t sure if I had enough to cover the whole cake. I definitely did have enough in the end.

Aaron took the rest of the cake to MOIP practice and then him and his roommates eventually finished the rest so it didn’t go to waste.

Fiance Guest Blog AKA Chicago 2009

Hello Pamcakes readers!

Allow me to introduce myself. My name is Aaron. If you read this blog AT ALL in the last 6 months, you know DARN well who I am. I asked Pam to marry me back in November. She said yes!!! Anyway, I’m entering a guest blog today and so without further ado… let’s get started:

So I’m writing this on sunday morning, Feb 7th. Pam is living up to her blog name this morning by making pancakes and eggs for us!! BUT, my mission today is to tell you about a trip to Chicago that my band and I took back in early December to play a couple of shows. Meeting of Important People is made up of Me (bass guitar), Matt (drums), and Josh (singing and guitar). I’ve been in this band for a few years. I enjoy it!! Yep. I drag Pam out to shows all the time… and she does a great job of acting excited! (kidding).

The first leg of the trip started EARLY on sunday morning (dec 6th). We had a show in Madison, Wisconsin that night. Thats ten hours, so we were loaded up with our gear and AMBITIONS galore!!! Here we are departing from ETNA! (Josh is driving)(Matt is singing)(I’m looking at the camera)

It was a long drive… honestly it was LONG!! Here are some highlights of that drive:

Rest stops: We spend alot of time in them on these trips. It tends to freak me out because they all seem to be identical… So after 2 1/2 hours of driving you get out of the car and walk into a building that looks identical to the last building you were in… WEIRD!!!

Alright… Let me explain… I know MAC donald’s is bad for you and I generally never eat there, but on these trips…. I dunno, we just can’t resist filling our stomachs with TOTAL GARBAGE!!! This is the definition of a GUILTY PLEASURE!!

I eat pretty healthy since I met Pam. Its like Samuel L. Jackson in Pulp Fiction: “…well, my girlfriend is a vegetarian, which pretty much makes me a vegetarian…” HAHA So somehow that makes me feel ok about all this junk.

Around dark we ended up at this outlet mall. They had some interesting eateries. We didn’t eat any… we were there for the bathroom. I love the name of this place though.

So we got to Madison. Funny little town… It’s only like a few hours north of Chicago… The show was good… not very well attended. We played good though. There are no pictures of us playing because I was taking the pictures. Matt and Josh are watching the other bands…

HA Ok, so, we drove back to Chicago and stayed with a friend of matt’s from high school, Jason. This guy seriously saved our lives… we stayed with him Sunday, Monday, & Tuesday nights!!! His apartment is pretty tiny, but we don’t care… Here was my bed:

We went to sleep right away… It was late and Jason had to go to work in the morning…

So first thing in the morning we headed out for breakfast… This was the first snow I saw this winter…

The restaurant was called “orange” I think… Local chain… a bit pricey… But we got cucumber in our water… seems worth it… right?

We finished breakfast and came back to Jason’s apartment to practice a little song that Josh wanted to cover… mostly just having fun… It was nice to relax!!

Next we headed out again to visit a famous guitar store that Josh had visited before… as well as some other sights…

So at this point it was officially monday night… We stopped at a little convenience store to get some cereal and milk along with some bananas, eggs, and bacon for the morning… SAVE MONEY!!!

We ate some cereal… made some arrangements and planned to go get some Chicago style deep dish…

Its good having a guy who lives in Chicago with us… because he knows where the good spots are… Edwardo’s was GOOOOD!

I was like a regular FOODIE. I guess that means you are willing to embarrass yourself by getting a camera out every time you are about to eat anything… hahaha

Next we took a taxi to the Green Mill Cocktail Lounge. I’m told that this place was were Al Capone hung out during the prohibition. Its a really swanky jazz club now. All of the insides have been kept original for most of the century. We were warned not to talk at all during the band. I have to admit, it was pretty awesome. Too dark inside to take pictures though… Sorry…

OK… At this point we were exhausted… We came home to Jason’s apartment and (of all things) sat around watching the movie “swingers”. HAHA! What can I say? Afterwards we passed out and got up with a full day of sight seeing planned… But first, BREAKFAST!!! Matt made Omelets for everyone.

I was in charge of frying the bacon. Ha, cheap bacon purchased from a convenience store. We were taking what we could get.

Finally, we went up to the top of the building formerly known as the sears tower… I’m sorry to say that the battery in the camera died up there… It was sad, I was really enjoying all the documentation…

But ya know what… Its for the best… that night we played a show and it was pretty good… We played with a Beatles cover band which is probably the only thing that I wish I could show you…

A Salmon Recipe(!) & Shovel Fail 2010

Sunday Evening. Hm. Church was canceled today due to the massive snowstorm here.

Let’s talk about the weekend.

SNOW STORM.

Friday night Aaron and I both left work early because it started snowing around 1 PM. I left around 4 instead of 5. That one hour made all the difference…

Aaron came over around 6 and we got to making salmon for dinner. Thanks Mom for leaving salmon in the freezer! We put it to good use.

I made a spinach salad with the following:

  • baby spinach (trying to use up the massive amounts from Costco..
  • 1 red bell pepper (I went through SIX bell peppers in one week)
  • red onion
  • slivered almonds
  • feta

I want to mention the dressing we were using because it is the most amazing stuff. It’s Bolthouse Farms Yogurt Blue Cheese. I got it at Whole Foods and can’t seem to find it anywhere else. It’s made with yogurt instead of mayonnaise. It’s AWESOME.

Panko-crusted Salmon Recipe

Adapted from Simply Recipes

Ingredients

2 teaspoons olive oil

2 pieces thickly cut, boneless salmon (each 6 oz)

Salt and pepper to taste

2 Tbsp yellow mustard

1 Tbsp honey

1 1/2 teaspoons Italian seasoning

1/2 cup panko bread crumbs

1/2 teaspoon sweet paprika

Preheat the oven to 400°F. Set the salmon on a foil-lined, (non-stick sprayed!) baking sheet skin side down. Sprinkle generously with salt and pepper.

In a small bowl, combine the honey and mustard and 1/2 teaspoon of the Italian seasoning. In another small bowl, mix the panko with the remaining 1 teaspoon of Italian seasoning, 2 teaspoons of olive oil, and paprika.

Using a small spoon, spread the mustard mixture on the salmon; top with the bread crumb mixture.

Roast the salmon for 10-12 minutes (test at eight) or until it is almost completely firm to the touch and flakes when poked with a fork. Serve at once.

Serves 2

Sooo we were pretty much stranded in Bloomfield all day. Aaron took a second walk later in the day while I baked a cake. I’m going to post about that separately. Uhhh what did we do all day Saturday?? Sat around staring outside all morning, ate lunch, baked for about four hours and then Aaron convinced me to walk to Home Depot in East Liberty. This is about a 2 mile walk each way. Wouldn’t be bad if it hadn’t snowed TWO FEET. Who knows why I agreed to this…

It was about 30 degrees and dark outside. We were on a mission to buy a snow shovel.

There was a lot of walking in the middle of the street:

Aaron was so excited about going on this walk. He was like a little kid the whole time, jumping around and being happy and then he fell in the middle of the road. hahaha

The only redeeming factor of this trip was that we were going to stop and get coffee along the way.

We walked to Giant Eagle — CLOSED.

Then Whole Foods — CLOSED.

Plus we passed three Starbucks — CLOSED.

We made it to Home Depot after about a 45 minute walk. They were open but sold out of snow shovels. The sales person pretty much laughed at us and told us we shouldn’t have waited until 7 PM to buy a shovel.

I wanted to punch this man.

Soooo we started walking home again. This time, we stopped at Walgreen’s and bought pineapple for the Hawaiian pizza that we decided to make once we got back. Then we stopped at Panera (OPEN!) and finally got my coffee! It wasn’t very good and kind of hard to drink while staring at the ground trying not to fall but still, it kept my spirits up.

We made it home around 8(?) and Aaron called his roommate (who had previously offered to let us borrow his shovel…) and got a shovel. I prepared the pizza while he dug out his car. We used another TJ’s whole wheat pizza crust and this time, actually cooked it the whole way through. Small miracle.

Note to self: bake crust at 375 for 10 minutes then add toppings and bake another 15 minutes.


Aaron came back in, ate some pizza, and then went out again to finish digging out the car. I sat on the couch in a tank top and shorts reading blogs…

He called me about 30 minutes later to report that he was successful and was driving his car around Bloomfield trying to figure out what to do with it. It’s pretty much impossible to park at this point unless you dig out a spot for yourself.

This is the longest story ever, eh?

Almost done.

He found a spot on the main street about a block away and came back to my apartment. Then…he left again and went to hang out with friends at a bar down the street for a little while. I was pretty happy sitting in my apartment warm and with internet so I didn’t go along.

Sooo that was my Friday night into Saturday Pittsburgh snow storm recap. I’m pretty sure my rear-wheel drive car will be staying put in the garage for quite some time. We’re supposed to get 4 MORE inches on Tuesday. This is freaking lame. I should consider walking to the grocery store at some point soon I guess unless I want to live on 6 pounds of blueberries and 10 pounds of oatmeal for the week. Thank you Costco.
